This is Loba and I’s favorite way to cook up Beaver meat. I prefer fresh tomatoes or homemade tomato sauce but we’ve given the ingredients in easy to find materials for your convenience. This is a simple and tasty recipe and can easily be adapted to become beaver chili or something similar. It’s also excellent plain, wrapped up in some brined grape leaves.

extra virgin olive oil
1 large onion, diced
5 cloves garlic, minced
1 pint jar beaver meat
1 big can whole tomatoes
1 small can tomato paste
1 teaspoon salt
1 teaspoon sage
2 teaspoons bee balm or oregano
lots of black pepper
1 cup red wine

Saute the onion and garlic in the olive oil, add the rest of the ingredients, and smush the tomatoes with your hands. Add some more water if it seems a bit thick.  Simmer for a few hours.  Taste, and adjust the salt and pepper if you like, and add a bit more olive oil. That’s it!  Enjoy!!

    Thank you for sharing this unusual recipe!

    Here in New Zealand are no beavers but a lot of opossums… maybe we should try this recipe and do some good for nature since the possums eat some places to the ground.

    I know that there is an asian restaurant in Auckland which cooks possums.
    Problem is that you have to get the animals from an area where there are no poison bites… in my area are the bites… maybe we could spread the word and begin to eat the possums instead of chicken… and don’t have to lay the poison…

    I will see what I can do… maybe I will advertise in our news paper…
