Last night we had our first meal with fresh Dock and Mustard greens, and it was sooooo good. We’ve been craving greens in a crazy way lately, and being this far out in the sticks can make it difficult to get anything but sad, wilted iceberg lettuce this time of year. Mustard greens are one of my very favorite greens, and certain sign of spring! It also means the Nettles won’t be far behind. We’ve been attentively watching our greens patches and making sure they have sufficient water, and now the Dock is growing an inch per day (or so it seems) and Mustard is shooting up too. Joy!
When we can’t get fresh greens, we rehydrate dried Lamb’s Quarters and add carrots and fresh Rosemary for a taste that’s nearly as good as spring. Recipe and preparation instructions for that coming soon.
Oh, I can’t wait for the first Dandelions!
