Hello,

Making a Balsam Root and False Solomons Seal honey last summer I was unsure whether I should remove the cut pieces of root or not once it had cooled down. I ended up straining the roots out of the honey but wanted to ask someone more knowledgeable than I am.

The resulting honey was also quite a bit less volume than before I brought it too boiling three times. Reading Moore's recipe this surprised me as he said it might well expand.

This is a wonderful website!

So many wonderful ideas and recipes - thank you, Kiva. I'm just off to try and find some more local honey from the farmers market held in the middle of the city this lunchtime. Now I know what to do with my abundance of mint!

Thank you all for your wonderfully kind comments. If you like this, you're going to love the book :D

You could use Hawthorne, but it doesn't have that distinctive taste at all...

I use the Beebalm leaves for medicine and food but not in the honey because the lack the distinctly floral taste that make the honey SO good.

Chokecherry trees are hard to come by here; unless they are on private owned land. I decided to grow my own. It's still a baby and when my husband ran over it accidentally with the tractor, I thought it was lost. But it's growing back nicely. Hopefully next year I can get a harvest to make some of the chokecherry heart tonic. Can Hawthorne be added or substituted.

The Bee Balm came in beautifully this season. Do you use the leaves as well in the honey? I know the leaves are used in Oswego tea

Kiva,

This is a fabulous piece and I love the recipes. I especially like the wide-ranging combinations of flavors and odors in your preparations. And the teaching here is very special. Thank you.

Wow is right. Thank you, Kiva, for your grand obsession, and a blessing on it. Like April said, you have helped a lot of us move from the book to the kitchen.

I've already got my monarda honey infusing and dreaming about tasting it in a couple weeks.
Also choke cherry elixer from a wild cherry literally growing right outside my back door (funny, all these years and I never experienced the incredible smell of wild cherry bark!).
Now I've got to infuse some peppermint in vinegar in preparation for that Mint Sekanjabin!

Thank you Kiva for all this inspiration! I think I've learned more useful information from your blog in the last few months than the past 11 years of studying herbs.
